What do these nutrients do?In the kitchen
How to make it.
- Heat the oven to 200°C, or 180°C fan. Peel and chop sweet potato, then boil until soft and drain well. Mash with the milk.
- Meanwhile, dice onion, carrot and mushrooms. Heat the oil in a wide pan and soften the onion and carrot for five minutes.
- Add turkey, breaking it up with a spoon. Cook thoroughly, then stir in mushrooms and crushed garlic.
- Add tomatoes, peas and 120 ml water. Simmer until the vegetables and peas are cooked and the filling is thick enough to hold the topping.
- Spoon into a baking dish, spread mash over it and scatter grated cheddar on top. Bake for 15–20 minutes until bubbling and hot throughout, with golden edges. Divide into 4 portions.
Fit it around your training.
Why this combination?
Turkey supplies protein and sweet potato brings carbohydrate. Mushrooms deepen the savoury flavour and a modest amount of cheddar adds a browned finish.
