How the estimates work

In the kitchen

How to make it.

  1. Heat the oven to 200°C / 180°C fan. Soften the chopped onion and pepper in the oil for 6–8 minutes. Add grated garlic and the listed spices; stir for 30 seconds.
  2. Add the mince, breaking it up. Cook for 6–8 minutes until thoroughly browned with no raw centre. Stir in half the tomatoes and all the drained beans; simmer for 10 minutes until thick enough to hold inside a wrap.
  3. Crush the remaining tomatoes with a fork and spread half over the base of a baking dish. Divide the filling between the wraps, roll and place seam-side down in the dish.
  4. Spoon the remaining tomatoes over the centre of the wraps and sprinkle with grated cheddar. Bake for 18–22 minutes until bubbling and piping hot throughout.
  5. Rest for 5 minutes, then add lime juice and coriander. Divide into 4 equal servings.

Fit it around your training.

Why this combination?

Beef and beans provide protein and iron; tortillas and beans add carbohydrate. This is a complete main rather than a protein-only dish.

When it could work for you

A batch-friendly dinner after training. Beans, cheese and spice make it less suitable immediately before a run.

Plan food before, during & after your run

Storage & leftovers.

Cool, cover and refrigerate within one to two hours. Eat within 48 hours or freeze. Defrost in the fridge and reheat only once until steaming hot throughout.
