What do these nutrients do?

How the estimates work

In the kitchen

How to make it.

  1. Prepare the rice noodles according to the packet, then drain and weigh the cooked quantity. Pat tofu dry and cut into cubes. Slice the vegetables thinly.
  2. Mix peanut butter, lime juice, soy sauce, syrup, ginger and 60 ml warm water into a smooth sauce. Add water a spoonful at a time if very thick.
  3. Heat the oil in a wide non-stick pan. Cook tofu for six to eight minutes, turning, until its edges are golden.
  4. Add pepper, carrot, crushed garlic and finely chopped chilli. Stir-fry with a splash of water until the vegetables soften slightly.
  5. Reduce the heat, add noodles and sauce, and toss until hot. Divide into 2 portions.

Fit it around your training.

Why this combination?

Tofu and peanut butter contribute protein, while noodles provide carbohydrate. Lime balances the rich sauce, so you do not need to rely on a large amount of soy sauce for flavour.

When it could work for you

A substantial plant-based meal after training. Fat, fibre and chilli can feel heavy close to a run, so practise your timing.

Plan food before, during & after your run

Storage & leftovers.

Cool and refrigerate within one to two hours. Use within 48 hours. Reheat once until steaming hot, with water to loosen the sauce.
