How the estimates work

In the kitchen

How to make it.

  1. Dice onion and carrot, slice peppers and crush garlic. Cut chicken into bite-size pieces on a separate board.
  2. Heat oil in a deep pan. Soften the onion and carrot for five minutes, then add chicken and peppers and stir for a few minutes.
  3. Add garlic, smoked paprika and tomatoes with 250 ml water. Simmer gently for 15–20 minutes, stirring.
  4. Rinse and drain butter beans. Add to the pan and simmer until the beans are hot and chicken is fully cooked throughout. Add water if needed.
  5. Taste and season. Divide into 4 bowls and serve with the measured bread.

Fit it around your training.

Why this combination?

Chicken and beans bring protein, while bread makes the meal more substantial in carbohydrate. Sweet peppers and smoked paprika give the stew its flavour.

When it could work for you

A filling post-run dinner or a batch-cooked lunch. Beans and wholemeal bread may need more digestion time before running.

Plan food before, during & after your run

Storage & leftovers.

Cool promptly in shallow containers and refrigerate within one to two hours. Eat within 48 hours or freeze. Reheat once until steaming hot throughout.
