How the estimates work

In the kitchen

How to make it.

  1. Put rice, coconut milk, milk and sugar in a heavy-based saucepan. Add 150 ml water.
  2. Bring to a gentle simmer. Cook over a low heat for 25–30 minutes, stirring frequently so the rice does not catch.
  3. Add more water if needed and continue until every grain is tender. The pudding thickens as it cools.
  4. Cut mango flesh into small cubes and toss with lime juice.
  5. Divide the rice into 4 portions and top with mango. Serve warm, or cool quickly if keeping for later.

Fit it around your training.

Why this combination?

Rice, fruit and sugar contribute carbohydrate. Coconut milk adds a creamy flavour and fat; the milk choice changes protein and micronutrient estimates.

When it could work for you

A dessert or carbohydrate-containing snack. Its richness may not suit the hour immediately before running.

Plan food before, during & after your run

Storage & leftovers.

Cool rice pudding quickly, ideally within one hour, and refrigerate. Eat within 24 hours. Reheat at most once until steaming hot, keeping fresh mango separate until serving.
