How to make it.
- Heat the oven to 180°C / 160°C fan. Line an 18 cm square tin. Gently heat the sugar with 100 ml water, stirring just until dissolved; remove from the heat.
- Add the chopped dairy-free chocolate to the warm syrup and leave for 2 minutes. Stir until melted, then whisk in the oil until glossy and combined. Let it cool until warm rather than hot.
- Sift in flour and cocoa. Fold just until no dry flour remains, then spread into the tin. Scatter over raspberries, dot with peanut butter and swirl shallowly.
- Bake for 23–28 minutes until the edges are set and the centre no longer looks liquid. A skewer should show moist crumbs rather than raw batter. Bake longer if needed.
- Cool fully in the tin for about 90 minutes, then cut into 9 equal squares. Chill briefly first for cleaner cuts.
