What do these nutrients do?

How the estimates work

In the kitchen

How to make it.

  1. Heat the oven to 170°C, or 150°C fan. Cut beef into even chunks, slice onion and mushrooms, dice carrot, and slice peeled potatoes thinly.
  2. Brown beef in half the oil in a casserole in batches. Set aside. Soften onion and carrot in the remaining oil, then add mushrooms and crushed garlic.
  3. Stir in flour, then tomatoes and 650 ml hot water. Return the beef, add thyme, and bring to a simmer.
  4. Layer potato slices over the stew. Cover and bake for about 90 minutes. Add hot water around the edge if the casserole becomes dry.
  5. Uncover and cook for a further 30–50 minutes until the beef is tender and potatoes are soft with golden edges. Cook the peas thoroughly according to the pack and divide everything into 4 portions.

Fit it around your training.

Why this combination?

Lean beef provides protein and iron; potatoes make the carbohydrate part of the meal. A long, gentle cook softens the beef without needing a cream-based sauce.

When it could work for you

A weekend comfort-food meal after training, with extra portions for a busy evening. Choose the portion and any extra bread according to your appetite.

Plan food before, during & after your run

Storage & leftovers.

Cool promptly in shallow containers and refrigerate within one to two hours. Eat within 48 hours or freeze. Reheat once until steaming hot throughout.
