How the estimates work

In the kitchen

How to make it.

  1. Heat the oven to 180°C / 160°C fan. Line an 18 cm square tin. Gently heat the sugar with 100 ml water, stirring just until dissolved; remove from the heat.
  2. Add the chopped dairy-free chocolate to the warm syrup and leave for 2 minutes. Stir until melted, then whisk in the oil until glossy and combined. Let it cool until warm rather than hot.
  3. Sift in flour and cocoa. Fold just until no dry flour remains, then spread into the tin. Scatter over raspberries, dot with peanut butter and swirl shallowly.
  4. Bake for 23–28 minutes until the edges are set and the centre no longer looks liquid. A skewer should show moist crumbs rather than raw batter. Bake longer if needed.
  5. Cool fully in the tin for about 90 minutes, then cut into 9 equal squares. Chill briefly first for cleaner cuts.
