How the estimates work

In the kitchen

How to make it.

  1. Heat the oven to 210°C, or 190°C fan. Cut potatoes into small, even chunks and toss with most of the oil. Roast for 20 minutes, turning once.
  2. Mix mustard, honey, lemon juice and the remaining oil. Cut broccoli into small florets.
  3. Move potatoes to one side of the tray. Add salmon and broccoli, then brush the fish with the glaze and toss some through the broccoli.
  4. Cook for about 12–15 minutes more, following the fish pack guidance, until salmon is opaque and separates easily and the potatoes are tender.
  5. Divide into 2 portions, spooning over the tray juices.

Fit it around your training.

Why this combination?

Salmon provides protein and oily-fish fats; potatoes supply carbohydrate and broccoli adds vegetables. Honey balances the sharp mustard rather than turning the sauce into a large sugary coating.

When it could work for you

A quick evening-training dinner when you want something warm. Increase the potato portion if your day calls for more food.

Plan food before, during & after your run

Storage & leftovers.

Cool promptly in shallow containers and refrigerate within one to two hours. Eat within 48 hours or freeze. Reheat once until steaming hot throughout.
