How the estimates work

In the kitchen

How to make it.

  1. Heat the oven to 180°C, or 160°C fan. Line a small baking dish with baking paper.
  2. Mash banana until mostly smooth. Beat in eggs, milk, honey and lemon juice.
  3. Stir in oats and self-raising flour, then fold in most of the blueberries. For a finer, more cake-like crumb, blend the oats first.
  4. Pour into the dish, scatter remaining berries over the top and bake for 25–30 minutes until set in the centre. Do not leave a raw batter middle.
  5. Rest for five minutes, then divide into 4 portions. Serve with the listed yoghurt alongside.

Fit it around your training.

Why this combination?

Oats, banana and berries contribute carbohydrate, with protein from eggs, milk and yoghurt. Lemon adds flavour without making the bake intensely sweet.

When it could work for you

Breakfast after an early run, or a snack later in the day. A default square may be only part of a larger breakfast after a long run.

Plan food before, during & after your run

Storage & leftovers.

Cool promptly and refrigerate within one to two hours, keeping yoghurt separate. Eat within 48 hours. Freeze extra baked portions if needed and reheat once until hot.
