How the estimates work

In the kitchen

How to make it.

  1. Crush the biscuits into coarse crumbs and divide between small dessert glasses.
  2. Beat the cream cheese until smooth, then fold in yoghurt, most of the honey and the lemon juice.
  3. Mash three quarters of the raspberries with the remaining honey, leaving a little texture.
  4. Layer the lemon filling and mashed raspberries over the crumbs, then swirl gently with a spoon.
  5. Top with the remaining berries. Chill for at least one hour and divide the batch into 4 equal portions.

Fit it around your training.

Why this combination?

Yoghurt and cream cheese contribute protein and calcium; raspberries bring fruit and a tart balance to the sweet filling. It is dessert you can enjoy alongside ordinary meals.

When it could work for you

After dinner, or as a more substantial sweet snack. It does not need to earn its place through a workout.

Plan food before, during & after your run

Storage & leftovers.

Cover and refrigerate promptly. Eat within 48 hours and follow the earliest dairy use-by date. Assemble close to serving if you want the biscuit base to stay crisp.
