How the estimates work

In the kitchen

How to make it.

  1. Heat the oven to 220°C, or 200°C fan. Cut peeled sweet potato into small cubes, toss with half the oil and smoked paprika, and roast for 20–25 minutes until tender with browned edges.
  2. Rinse and drain the beans. Roughly mash half, then mix all the beans with sweet potato, cumin, chopped chilli and half the coriander.
  3. Stir lime juice and the remaining chopped coriander into the yoghurt for the dip. Grate the cheddar.
  4. Spread filling over half of each tortilla, add cheese and fold. Brush a frying pan lightly with the remaining oil.
  5. Cook the folded tortillas over a medium heat for two to three minutes each side, pressing lightly, until crisp and the cheese melts. Cut into wedges and divide into 2 portions with the dip.

Fit it around your training.

Why this combination?

Tortillas and sweet potato supply carbohydrate; beans add fibre and some protein, and cheddar makes a modest amount of filling feel rich and savoury.

When it could work for you

A relaxed post-run dinner or a lunch you have time to enjoy. Beans and a cheesy filling are often more comfortable after running than immediately before.

Plan food before, during & after your run

Storage & leftovers.

Cool filling promptly and refrigerate within one to two hours; keep dip separate. Eat within 48 hours. Reheat assembled quesadillas once in a pan until hot throughout.
